🥣 Traditional Andalusian Gazpacho
Ingredients:
• 1 kg ripe tomatoes
• 1 large cucumber
• 1 green bell pepper
• 1/2 onion
• 1 garlic clove (optional)
• 50 ml extra virgin olive oil
• 30 ml sherry vinegar
• 1–2 slices of stale bread
• 500 ml cold water
• Salt and pepper to taste
Instructions:
1. Wash all the vegetables. Peel the cucumber and chop it together with the tomatoes, pepper, onion and garlic (if using).
2. Add everything to a blender, including the bread.
3. Blend until smooth and creamy.
4. Add the olive oil, vinegar, salt and pepper, and blend again to combine well.
5. Adjust the texture with cold water until you get your desired consistency.
6. Chill in the fridge for at least an hour before serving.
Serve it cold with diced veggies, hard-boiled egg or cured ham if you like. A refreshing taste of Spain!

🍞 Spanish-Style Torrijas (Sweet Fried Bread)
Ingredients:
• 6 slices of stale bread
• 500 ml whole milk
• 2 eggs
• 100 g sugar
• 1 cinnamon stick
• Lemon peel
• Oil for frying
• Sugar and ground cinnamon for dusting
Instructions:
1. Heat the milk with the cinnamon stick, sugar, and lemon peel. Let it cool slightly.
2. Soak the bread slices in the milk mixture until they’re soft but still hold their shape.
3. Dip in beaten eggs and fry in hot oil until golden on both sides.
4. Drain on paper towels and sprinkle with sugar and cinnamon.
