The "Bayona" is made with the central part of the shoulder of the pig.
When the shoulder is divided and is polished, separates the middle of it, then add salt and pepper and let marinate. Once has marinated it fills into natural pork casings and hung in drying, to achieve the optimum degree of maturation.
