* The Ham is made with BACK LEGS of the pig

       -Weight approx. 4 to 5,5 Kg                                  -Weight approx. 6,5 to 8,5 Kg

       -Smaller size than Ham                                          -Larger Size than the Shoulder

       -Maturing Time less than the Ham                    -Maturing Time greater than the Shoulder

       -Greater proportion of bone and fat                  -Less bone and fat proportion

WHITE PORK HAMS

Jamón Curado:  This is the name given to white pork hams sold in Spain.

Jamón Serrano:  ETG (Traditional Specialty Guaranteed) seal of quality in the EU, to protect, typify and improve the image of traditional products produced in the EU countries.

 

Protects the traditional method of processing, not origin as do Protected Designations of Origin (PDO) or Protected Geographical Indications (PGI).

   

D.O.P. Teruel  (Protected Designation of Origin) From the region of Teruel (Aragón)

 

I.G.P. Trevélez  (Protected Geographical Indication) Coming from the province of Granada (Andalusia)

       

I.G.P. Serón  (Protected Geographical Indication) From the municipality of Serón (Almería)

 

IBERIAN PIG HAMS

Classification of Iberian Ham:

For its RACE:

  • 50% / 75% / 100% Iberian

For its FEEDING:

  • Bellota 100% ( Must be 100% Iberian Race)
  • Bellota (Can be 50% or 75% Iberian Race)
  • Cebo de Campo (Can be 50% or 75% Iberian Race)
  • Cebo (Can be 50% or 75% Iberian Race)

The official seal, is the seal that identifies the Iberian ham and guarantees its quality, and all the pieces (Paletillas and Hams) must take it OBLIGATORY.

Only can be called PATA NEGRA, to Hams of Bellota, 100% Iberian Race, with Black Official Seal.
