The White Tuna (Thunnus alalunga) is the highest quality fish in the tuna family. Is captured in the Bay of Biscay between the months of June to October with selective fishing gear, one by one, with hook. It is characterized by white and tender flesh, mild flavor and juicy texture, making it the favorite preserves the most discerning palates.
