The final maturation process, is the most important, preferably carried out in Wooden Barrels, and the ripening period will depend on the variety and the type of vinegar to make and which can be reached from 6 months up to several years.
In Spain we have 3 vinegar with Designation of Origin: Jerez, Condado de Huelva and Montilla-Moriles, in addition to a wide range of Vinegars flavoured, sweet and sour cream vinegar etc.
